You can raise 3 different farm animals in Harvest Moon 2. You also have a pet and a horse. You can have up to four cows at one time, just as you can only have four chickens, and four sheep.

Horse - Your horse will take a few seasons to mature, but once it does you can get the saddlebag to ride it and ship crops. Just toss crops in the horse's saddlebags and they'll automatically be shipped.

Chickens - Very easy to take care of, just feed your chickens every day and you'll make lots of money off of eggs. Place an egg in the incubator to hatch a chick. You should also carry your chickens out to the chicken range on some good days.

Cows - Cows take a lot of work, but they're worth it. They'll reward your efforts with two different sizes of milk: small or large. Get eight or more hearts on your cow's love meter to get the large milk. Talk to and brush your cows every day, and certainly never forget to feed them. On clear days you should let them graze in the pasture behind the barn.

Sheep - Sheep take about as much effort as cows. The first step to getting sheep is to, of course, build the sheep pen. Shampoo your sheep every day to make them happy, and talk to them. They should also go out the pasture some. Every week or so their wool will grow back and you can sheer it again. Don't ever forget to feed them.
